GmaFog's Favorite Desserts

When it comes to desserts, I don’t usually make them unless family or friends are coming over to visit. Usually, it is with short notice and sometimes no notice. 

Grandkids and children will have fun helping add the final touches on the desserts too! Here are a few recipes that are always fun to make with your friends or quickly make something before they arrive. 

Note: you can always substitute with gluten-free or sugar-free ingredients. The only caution I have is to make sure, if you add coconut flour as an ingredient, cut the flour by a ¼ and add more liquid to the mix. 

Enjoy making and eating these yummy treats!

Lemon Mousse 

All you need for this is:

  • 1 pint heavy whipping cream
  • 1 pudding mix of choice and flavor

Whip the heavy cream until it starts to thicken and slowly add the dry pudding mix. It takes about 5 minutes to whip until you get a peak. Spoon it into containers and set in the refrigerator for about an hour.

Another option is to use it as filling and icing for a cake.

Note: This dessert is very rich and you don’t want to eat very much at one time. Savor the moment!

Cake Mix Cookies

My daughter taught me how to make these cookies. The grandsons love making and eating them. This is the quickest and easiest set of ingredients for making this treat! 

Use your favorite cake mix, one egg, and oil. You can add your favorite sprinkles or chopped nuts on the top of them.

Ingredients:

  • 1 Cake Mix of Choice - if you get a good chocolate cake mix these will taste like brownies!
  • 1 large Egg
  • 1/2 cup Oil

Preheat oven to 350 degrees

Mix these ingredients together until all smooth. You can use two teaspoons to drop the dough or roll them into a ball and flatten on an insulated cookie sheet lined with parchment paper. Let the grandkids or children add their favorite sprinkles or chopped nuts on top before baking them. Bake for 8-10 minutes depending on the size of the cookies. Yummy! 

Gma’ Low Sugar Cashew Cookies

This is a new recipe in my collection and it was so easy. I had the ingredients in the pantry, so I decide to play with it. Cashew cookies are one of my top cookie recipes now. They are soft on the inside with a crunchy outside.

Ingredients:

  • 1 cup cashew butter - Any nut butter works.
  • ½ cup sweetener of choice - This recipe is made using Lakanto Monkfruit sweetener. Use sugar equivalent to ½ cup.
  • 1 large egg

Preheat oven 350 

Mix all ingredients in a mixing bowl - If cashew butter is warmed, it will mix easier. Place parchment paper on an insulated cookie sheet and roll the dough into 1 inch balls and flatten once they are on the cookie sheet. Sprinkle with sugar, your favorite sprinkles or nuts if you are into decorating your cookies.  

Bake for 10-15 minutes. Let them cool in the pan for about 5 minutes before moving them onto a cooling rack.

Gma’s Oatmeal Chocolate Chip Cookies

With all the “healthy” chatter, I decided to adjust this old recipe I have been making for 40 years by using less refined sugars and changed to honey. 

Ingredients needed for these cookies are: honey, butter, eggs, flour (gluten-free flour also works), baking soda, salt (optional), rolled oats and chocolate chips of choice (I use Lily’s no sugar chocolate chips).

Preheat oven at 325 degrees.

Blend these ingredients together:

  • ½  cup of honey (warm the honey to mix easier)
  • ½ cup of butter

After blended add:

  • 2 eggs
  • 1 tsp of vanilla

Sift in another bowl:

  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon of salt 

Slowly mix the dry ingredients with the honey, butter and egg mixture. Once those are mixed, add 3 cups of rolled oats and 1 cup of chocolate chips.

Place parchment paper on an insulated cookie sheet and roll the dough into 1 inch balls and flatten as you put them on the cookie sheet.

Bake cookies for 12-15 minutes (until brown around the edges)  Let them set for a minute on the cookie sheet then move them to a rack to cool.
